Our Sympathy to James Saccary and Jodie Read ~

Condolences to James and Jodie on the passing of James’ father, Jody Saccary.

Shirley’s “Secret” is Out ~ Here’s the Recipe for her Pineapple Cheesecake ~

Pineapple Cheesecake

Filling:

Mix together – 

2 pkgs. cream cheese

2 cans Eagle Brand Milk

2/3 cup lemon juice

Spread on top of your graham wafer crust.

Drain juice off the 2 cans crushed pineapple and thicken it with cornstarch (fairly thick).

Add pineapple and 1 tblsp. white sugar and a tsp. of lemon juice.

Cook the mixture until blended then cool the mixture. 

Spread it on top of the cream cheese filling.

Spread 1 large container of Cool Whip on top and keep refrigerated.

Keep leftovers refrigerated.
