Substitute low fat cream cheese mixed with bit of 1/2 fat mayo and low fat sour cream or yogurt or hummus. I like to mix with pkg. of dry taco seasoning mix,
Spread this mixture over the tortillas and sprinkle with mix of finely chopped onions, cucumber,
red peppers and cauliflower. Press veggies down with your hand, then roll-up and wrap in plastic wrap. Next day, unwrap and slice into rounds. One pkg tortillas – 10 makes a lot – maybe 50.

Scott was recently spotted with his latest “kitty.”
Apparently he was taking his newest “pet” for an outing.

1 cup all-purpose flour
1 cup brown sugar
2 tsp. baking powder
½ tsp. salt
½ cup peanut butter (can use extra crunchy)
½ cup milk (Can use 2% or Carnation)
2 tbs. cooking oil (I used Canola)
1 tsp. vanilla
½ cup walnut pieces (could use any nut you like)
½ cup chips (chocolate, peanut butter or butterscotch)
1 ½ cups hot water
Directions
Mix together flour, sugar, baking powder and salt with a spoon.
Add peanut butter, milk, oil and vanilla and mix well with spoon.
Spray an 8×8″ dish.
Spread batter in bottom.
Batter will be thick.
Sprinkle nuts and chocolate chips over batter.
Pour hot water on top.
Do not mix again.
(I just heat water to boiling in microwave).
Bake in preheated 350 degree oven for 45 minutes.
You will be able to see peanut butter oozing out the top of the cake.
